I'm partial to "East, West," a collection of short stories that put both sides at odd angles. Of the novels "Midnight's Children" is monumental; I also adore "Shame," a minor, but tight little slice of glory. Then there's his collection of essays "Imaginary Homelands," excellent, illuminating.
On the minus column, I never sank my teeth into "The Satanic Verses" and frankly, I think "The Ground Beneath her Feet" shows his talent dwindling.
